So, I tried to find this, but I didn't know where to.

I started idoceo on an iPad that had a different Apple ID logged in that mine. Here's my question. I have put in about 20 hours of work on this before I discovered that this was the case. Is it possible to download idoceo with my Apple ID but keep all the work I've done (assignments, pictures, 470 kids)?

It is only a matter of doing a backup of the information in iDoceo either with Dropbox, Google Drive or One Drive. Make sure you see the 'backup completed' after doing that backup.

The data in iDoceo is locally stored in the device and it does not depend on the user you logged in with. Unless you erase the app, your data should be kept intact but do that backup (or a couple of them) anyway, just in case.
